I make some killer mashed potatoes now, (no pun intended with the “killer,” I admit I use a lot of butter). Sometimes, I swirl in some sauteed spinach or kale to add green color and nutritional value. Now, with more awareness, I prefer eating ingredients I understand. Imagine trading out tons of unknown ingredients for essentially one – potatoes.
